This viral dish is loved for its simplicity and bold flavours. With roasted tomatoes and creamy baked feta, it’s a fuss-free meal that’s perfect for a weeknight dinner.

Ingredients
  

Ingredients:

  • * 200 g block of feta cheese or dairy-free feta for dairy-free
  • * 300 g cherry tomatoes
  • * 2 cloves garlic minced
  • * 2 tbsp olive oil
  • * 300 g pasta gluten-free pasta for GF option
  • * 1/2 tsp red pepper flakes
  • * Fresh basil for garnish
  • * Salt and pepper to taste

Instructions
 

  • Preheat oven to 200°C. Place feta and cherry tomatoes in an ovenproof dish. Drizzle with olive oil, season with red pepper flakes, salt, and pepper.
  • Bake for 25 minutes, until tomatoes are bursting and feta is golden.
  • While baking, cook pasta according to package instructions.
  • Once baked, mash the feta and tomatoes together to create a creamy sauce. Stir in cooked pasta and garnish with fresh basil.

Notes

Notes:
* You can add roasted veggies like zucchini or bell peppers for extra nutrients.
* This dish can be served warm or cold as a pasta salad.
