Baked Feta Pasta
This viral dish is loved for its simplicity and bold flavours. With roasted tomatoes and creamy baked feta, it’s a fuss-free meal that’s perfect for a weeknight dinner.
Ingredients
Ingredients:
- * 200 g block of feta cheese or dairy-free feta for dairy-free
- * 300 g cherry tomatoes
- * 2 cloves garlic minced
- * 2 tbsp olive oil
- * 300 g pasta gluten-free pasta for GF option
- * 1/2 tsp red pepper flakes
- * Fresh basil for garnish
- * Salt and pepper to taste
Instructions
- Preheat oven to 200°C. Place feta and cherry tomatoes in an ovenproof dish. Drizzle with olive oil, season with red pepper flakes, salt, and pepper.
- Bake for 25 minutes, until tomatoes are bursting and feta is golden.
- While baking, cook pasta according to package instructions.
- Once baked, mash the feta and tomatoes together to create a creamy sauce. Stir in cooked pasta and garnish with fresh basil.
