Easy Cauliflower Rice
This Easy Cauliflower Rice is a fantastic low-carb alternative to traditional rice. It’s quick to prepare and pairs well with various dishes.
Ingredients
- 1 head of cauliflower
- 2 Spring onions
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh herbs for garnish
Instructions
- Grated or pulse cauliflower in a food processor into rice-sized pieces & thinly slice spring onions.
- Heat olive oil in a large skillet over medium heat. Add whites of the spring onions to the pan, cook for 1-2 minutes until soft.
- Add cauliflower rice and remaining spring onions, season with salt and pepper, and sauté for 5-7 minutes until tender.
- Garnish with fresh herbs if desired.
Notes
You can add other vegetables or spices for extra flavour. Use as a low calorie replacement for rice in any dish.
