Shepherd’s Pie
Shepherd’s pie is a comforting dish made with savoury beef mince, topped with creamy mashed potatoes. It’s an economical wholesome meal that’s perfect for family dinners.
Ingredients
- 500 g lamb mince
- 1 onion
- 1 cup frozen pea carrot, corn
- 2 garlic cloves
- 2 tbsp tomato paste
- 1 tbsp Dijon mustard
- 2 tbsp plain flour
- 1 cups beef stock
- 1 tbsp olive oil
- Salt and pepper to taste
- For mashed potatoes:
- 1 kg potatoes
- 70 g butter
- 1 tbs parsley
- 30 g parmesan cheese
- Salt to taste
Instructions
- Dice onion and mince garlic. In a large pan, heat olive oil and fry diced onion and garlic until soft, add mince and cook till browned (break apart as it cooks).
- Stir in tomato paste and cook for a further 1-2 minutes, then add Dijon and stir through.
- Sprinkle flour over pan and mix through.
- Add the beef stock and peas, carrot, corn, and simmer for 10 minutes, stirring occasionally.
- Meanwhile, cook the potatoes in boiling salted water until tender. Drain and mash well with butter and milk.
- Transfer lamb mixture to a baking dish and top with mashed potatoes, sprinkle with parmesan cheese. Bake for 30 minutes until golden, garnish with finely chopped parsley.
Notes
• For an extra crispy top, add grated cheddar cheese before baking.
Can substitute lamb mince for beef or any other mince.
