- 500 g lamb mince
- 1 onion
- 1 cup frozen pea carrot, corn
- 2 garlic cloves
- 2 tbsp tomato paste
- 1 tbsp Dijon mustard
- 2 tbsp plain flour
- 1 cups beef stock
- 1 tbsp olive oil
- Salt and pepper to taste
- For mashed potatoes:
- 1 kg potatoes
- 70 g butter
- 1 tbs parsley
- 30 g parmesan cheese
- Salt to taste
Dice onion and mince garlic. In a large pan, heat olive oil and fry diced onion and garlic until soft, add mince and cook till browned (break apart as it cooks).
Stir in tomato paste and cook for a further 1-2 minutes, then add Dijon and stir through.
Sprinkle flour over pan and mix through.
Add the beef stock and peas, carrot, corn, and simmer for 10 minutes, stirring occasionally.
Meanwhile, cook the potatoes in boiling salted water until tender. Drain and mash well with butter and milk.
Transfer lamb mixture to a baking dish and top with mashed potatoes, sprinkle with parmesan cheese. Bake for 30 minutes until golden, garnish with finely chopped parsley.
• For an extra crispy top, add grated cheddar cheese before baking.
Can substitute lamb mince for beef or any other mince.
