Cowboy Caviar Salad – White Balsamic Vinaigrette Fresh & Zesty!
This Cowboy Caviar Salad is a vibrant, nutritious mix of diced vegetables, beans, and herbs, tossed in a delicious, tangy White Balsamic Vinaigrette. Packed with fibre, protein, and fresh flavours, this salad is perfect for sharing, added to your favourite protein or as a light, healthy meal!
Ingredients
- 1 x 400g tin corn
- 1 x 400g tin black beans
- 1 red onion
- 1/2 cup fresh parsley
- 1 red capsicum
- 1 cucumber
Instructions
- Drain corn and beans. Finely dice onion, dice capsicum and cucumber and chop parsley.
- In a large mixing bowl, combine corn, black beans, red onion, parsley, capsicum, and cucumber.
- Pour over the White Balsamic Vinaigrette and toss until the salad is evenly coated.
- Season with salt and pepper if desired and serve immediately or chill for up to an hour to enhance the flavours.
Notes
• For a bit of spice, add a chopped jalapeño or a pinch of red pepper flakes. • Mix in diced avocado or tomato for additional texture and flavour.
Pairs Well With: Grilled chicken, fish, tortilla chips, or as a topping for tacos.
Storage: • Fridge: Store in an airtight container for up to 3 days. • Freezer: Not recommended due to fresh vegetables.
