- 1 x 400g tin corn
- 1 x 400g tin black beans
- 1 red onion
- 1/2 cup fresh parsley
- 1 red capsicum
- 1 cucumber
Drain corn and beans. Finely dice onion, dice capsicum and cucumber and chop parsley.
In a large mixing bowl, combine corn, black beans, red onion, parsley, capsicum, and cucumber.
Pour over the White Balsamic Vinaigrette and toss until the salad is evenly coated.
Season with salt and pepper if desired and serve immediately or chill for up to an hour to enhance the flavours.
